Pork Tenderloin with Balsamic Onion-Fig Relish

Pork tenderloin (1 lb)
Dried Mission figs
Balsamic vinegar
Low-sodium soy sauce
Onion
Prep: 4 minutes
Cook: 10 minutes

Preparation

  1. Heat up kitchen appliance to 425°.
  2. Sprinkle pork equally with salt and pepper; coat with cookery spray. Heat a medium-sized iron frying pan or alternative ovenproof frying pan over medium-high heat. Coat pan with cookery spray. Add pork; cook four minutes or till bronzed on all sides, turning sometimes.
  3. Whereas pork browns, coarsely chop figs. mix vinegar, two tablespoons water, and condiment during a tiny bowl. once pork is bronzed, take away pan from heat. Add figs, onion, and vinegar mixture to pan, stirring to loosen bronzed bits.
  4. Bake, uncovered, at 425° for quarter-hour or till a measuring system registers 160° (slightly pink). Stir onion mixture; cowl pan loosely with foil. Let stand five minutes before slicing.
